PESTO ala POBRE

Tuna Pesto with Broccoli

I prepared an early dinner, since it's Thursday and i have an IMPORTANT appointment at 5:00 pm so preparing dinner later is not possible. I made a twist with this pesto pasta that my family loves. Today i made it a healthier one.

What you need:

450g  pasta cooked as directed
1 380g can tuna flakes (I prefer mine in brine)
50g fresh basil chopped
200g broccoli or 1 medium head
1 medium onion chopped
3 cloves garlic chopped
salt and pepper to taste
sesame oil for sauteing

Here's How:

While waiting for the pasta to cook and at least 5 minutes before it's done i put in the broccoli to boil.

1.  Saute garlic and onion in sesame oil, I use sesame oil because this is what i have in the kitchen.
2.  Add the tuna and the chopped basil let it cook for a bit in low heat while waiting for the pasta.
3.  Mix cooked pasta in the pesto mixture and add salt and pepper to taste.

Served with my  salad of lettuce, cucumber and tomatoes.

This recipe makes 6-8 servings
